Italian Sausage Soup


I will not pretend to be a great photographer. Nor will I pretend to have this stellar recipe blog like a friend of mine (Natalie) :). But I will share what I think turned out to be a yummy, winter meal. 
Italian Sausage Soup
1 lb. Italian sausage (I used 1/2 lb. and some turkey sausage
Diced tomatoes (15 oz can)
15 oz. black beans
15 oz. other beans of choice (whatever you have in the house. I had kidney beans)
4 cups beef broth (I used low sodium broth)
2 cloves garlic
Fresh basil

Cook sausage, add garlic. Saute for 5 minutes
Add all other ingredients. Simmer (covered) for 15 minutes. 
Done. 

I added some whole wheat pasta to my dish, but only because it would appeal to the kids more. They liked it...well, everyone but Connor. 

Fresh bread & some Romano or parmesan cheese on top. 
Fresh vegees on the side.

Yummy. 
Tomorrow night? Chicken nuggets...you know, to appeal to the finicky eaters in the home.
